Sweet Potato Drop Biscuits

Prep time 10 minutes, Cook Time 17 minutes, Yields 10
 
1 10-ounce sweet potato
3 Tbs water
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 cup Splenda or No Calorie Sweetener
2 Tbs vegetable oil
1/2 cup no fat milk
Nonstick cooking spray
Preheat Oven to 400°
 
Peel sweet potato and cut into 1 inch cubes.
Boil until tender.

Meanwhile mix together;
flour, baking powder, salt & sweetener

Once sweet potato is cooked puree with a fork, add water & oil and mix.
Then add to flour mixture and mix together.

Drop a heaping tablespoon onto cookie sheet with cooking spray on it.

Cook for 10-12 minutes or until golden brown.
