Rosemary Roasted Chicken Thighs with Potatoes

Prep time 45 mins, Cook Time 30 mins, Serving size 6

2 tsp Paprika
1 1/2 Crushed Rosemary Leaves
1 tsp Minced Garlic
1/2 tsp Black Pepper
2 Tbs Olive Oil
1 tsp Salt
6 bone-in-chicken thighs, skin removed (about 2 lbs.)
1 1/2 lbs small red potatoes, cut into 1-inch cubes

Mix oil, all of the Spices and salt in a large bowl.
Cut potatoes like so, about 1 inch cubes.
Now add chicken and potatoes to bowl, toss to coat well. Cover and refrigerate for about 30 mins.
Arrange chicken and potatoes in a single layer baking pan sprayed with no-sick cooking spray.
Roast in preheated 425f oven 30 mins or until chicken is cooked through and potatoes are tender, turning potatoes occasionally.
Served with broccoli slaw and parsley for garnish.

Lemon Chicken Drumsticks

Serving size 6, Prep time 2 to 4 hours, Cook time 1h 15m

12 Chicken drumsticks (about 3 lbs)
3 Large lemons
2 Tbs thyme
2 Tbs olive oil
1/4 tps sea salt
1/4 tps black pepper
2 Tps fresh parsley, for garnish
Orzo for serving

Rinse chicken and pat dry
Combine the zest and juice of two lemons, thyme, olive oil, salt and pepper in a large bowl.
Add drumsticks and toss to coat. 
Now cut one of the lemons you zested into slices and place on top of chicken. Cover and refrigerate for 2 to 4 hours or over night.
Arrange the drumstick in a shallow baking dish. Don't crowd the drumsticks. Pour any marinade over the chicken, and place lemon slices between chicken.
Bake at 375 for 1 1/4 and occasionally bast the chicken until cooked through and golden brown. Once cooked used juice of 3rd lemon to drizzle over chicken.
Cook Orzo then spoon orzo or rice onto platter. Arrange drumsticks like so and spoon juices on orzo. Place a small amount of parsley on chicken.

LIME-DRENCHED LONDON BROIL


Serving size 4-6.  Prep time 4 hours.  Cook time 30 minutes.

Ingredients

2 Tbs Olive oil
4 garlic cloves crushed
3 limes
1/4 tps of Coriander
1 small onion sliced into 1/4 inch 
about 2 Lbs of London Broil
Salt and pepper to taste

In glass casserole whisk together oil, coriander, salt, pepper, juice and zest of one lime.
Add london broil and flip a few times to cover london broil with marinate

Now add onions and crushed garlic. Place one garlic in each corner and place onions on top and sides of the london broil.

Now with the 2nd lime slice into about 5 slices and place on top of london broil.

Now cover and let marinate for about 4 hours. 
Now set your oven rack to the middle and bake on 400 for 15 minutes covered. Then change to top rack and broil for 15 more minutes uncovered.
 
Now let set for 10 minutes then slice into thin strips.

Now put slices back in casserole dish and use the last lime to zest and juice the slices.

Now serve and enjoy.

Buttery Popcorn

Have you have tried to add butter to your popcorn and it makes you popcorn so soggy. Here is what I do to make my Buttery Popcorn.

Prep time 3 minutes, cook time 2 1/2 minutes

 First you will need a microwave safe bowl for your popcorn.
1Tbs of butter and a 1/4tps of table salt.
1 Bag of your favorite popcorn, I like extra butter popcorn.
 
Put butter in bowl and cook for 1 minute in microwave or until melted then add salt. Turn bowl on side and keep turning the bowl until the entire surface is covered in butter. Now that your bowl is covered in butter keep turning and blow into the bowl until the butter almost is hard again. Then set to the side.


Now cook your popcorn and once its done, dump your popcorn in your buttered bowl and you will have a even coat of butter on your popcorn as the hard butter heats up from the hot popcorn.
 Top with popcorn salt and add Old Bay or Szechwan seasoning if you want to kick it up a notch.

Stir-Fry Shrimp w/Instant noodles & Chicken

Today I decided to start my cooking blog. I always sit here and think what I want to make for dinner but sometimes you have to start with what you have left in the frig. So here is today's dinner, I will try to give you new recipes as often as possible.

Serving size 2, prep time 5mins, cook time 30mins.

First you will need two pieces of chicken, 1lb of peeled and deveined shrimp uncooked & one pack of instant noodles shrimp flavor.

Place chicken in baking dish and drizzle with 1/4 cup of olive oil, 1Tbs of soy sauce & 1Tbs rice vinegar. Cover and cook 375ยบ for 30 minutes.

Now cook your instant noodles follow the directions but add a pinch of salt a shake or two of soy sauce and a 1tps of rice vinegar.

Now in your hot wok add a drizzle of olive oil and a 1/4 cup of broth from you noodles and cook your shrimp till they start to turn pink. Once they are almost cooked add your pot of noodles and broth to the wok and let come to a boil. Turn off heat and set to the side uncovered till chicken is done.

Place chicken on plate and use a slotted spoon to serve shrimp noodles. Drizzle a small amount of broth over chicken.
